Choose from a wide array of recipes, based on country cuisine traditions from around the world. For private group classes, Cynthia will work with each group to customize your class. Monthly open classes will feature different themes throughout the month. The premise of all the menus is to provide you with easy entertaining solutions that you can replicate at home. Participants leave with recipes in hand and a fresh new approach to seasonal cooking and appreciation of where food comes from. Aprons and knives are provided.
After completing your menu the group will enjoy their culinary creation together in the farmhouse’s dining room or outside in the scenic screened-in porch. A sampling of local wines is included.
Cooking Classes
Your class begins at 9:30am at the farmhouse. The first 3 hours (or so) are devoted to a combined instruction and hands on cooking class. Your morning will start with a coffee or tea in the sunny breakfast room where Cynthia will review menu and the day’s activities. This also could include picking a few ingredients in kitchen garden. Following your class, lunch will be enjoyed in the farmhouse dining room or in the screened in porch. Students will learn about the region, its food and wine and the stories behind the menu they will be creating together.

Farm Experience and Cooking Class
Your day starts at 8:30am at a one of the designated County’s farms where you will meet Cynthia and harvest and/or pick up ingredients for your cooking class. Up to 2 farms or producers will be scheduled that morning, depending on your chosen menu, time and item availability. If the weather doesn’t cooperate, we will just visit more farm stands. Make sure to bring gardening shoes/boots, sun hat and gloves! All participants will then convene at the farmhouse to begin their lesson in the farmhouse kitchen. The Class follows the schedule above.

Cooking Themes
We have based your classes on various themes to make your cooking class an experience that can easily be replicated for home entertaining, Cynthia has chosen many traditional recipes and has re-worked them to bring a healthier and “taste impact” to your palate. She will work with your group create a menu that suits your tastes, talents and any dietary requirements. Approximately 4 to 5 dishes will be created and enjoyed for the group lunch.
The majority of the ingredients will be sourced locally (except for the fish and seafood).
Themes with sample dishes:
Tuscan Farmhouse – Learn to make pasta from scratch, risottos and rustic farmhouse dishes like Roasted Pesto Pork Loin and potato-sage gnocchi to zabaglione ice cream or biscotti for dessert.
Provence Countryside – French country cooking is warm and welcoming. From homemade crepes, farmhouse casseroles as beef bourguignon, homemade sausages to croquettes.
Indian Spices – Take a journey to India and learn how to use their amazing spices to create everyday meals with a kick. Homemade curries, kebabs, dips and vegetarian dishes that will inspire you.
Asian & Thai Villages– Dumplings, Dim Sum and more. Pepper -Coriander crusted grilled chicken to Moo Shu pork with sesame scallion crepes and Pad Thai – recipes from regions throughout Asia.
Middle Eastern & Mediterranean – Tabbouleh to stuffed grape leaves. Armenian pilaf and braised lamb shanks. Tagines and hearty country stews. Try Baklava with pecans and maple syrup.
Traditional Farm Country – Summer grilled-corn salad, Roasted Chicken with apple & Onion dressing, tea biscuits, homemade lemonade and gingerbread. Sausage stuffed onions to honey raisin bread pudding.
Team Building Workshop
Communications is key when it comes to team building. What better way to develop that skill, than in the kitchen cooking together. The workshop is a merger of Celebrity Apprentice meets Iron Chef in its format. Employees compete in an appetizer cook off with assigned roles in each group, such as project manager and food stylist. Judging is based on a number of components, including originality, based on ingredients sourced from the “surprise” table. From the kick-off “ice-breaker” exercise to the final presentation, this two hour workshop, plus reception, is a unique way to build your team and have a fun afternoon together.
If you need a great space for a business meeting in the morning…look no further. Huff Estates Inn has a large boardroom overlooking the winery. Have your meeting and a light lunch and make your way to your team building workshop for 1:30pm. We are located just 10 minutes from the Inn. Or you can start your workshop late morning and enjoy your creations for lunch!

Couples Package – “The full County Experience”
A special day has been created for two. Enjoy a private cooking lesson and day exploring the County with Cynthia.
Pick your theme and date and then the adventure begins!
This package includes:
- Meeting you and your guest at your accommodations in the County at 9am
- Traveling together to tour selected farms/producers and purchase/pick the ingredients for your class
- Customized menu will be created and your cooking class format will be as above
- Following lunch, Cynthia will take you to visit and enjoy tastings at 2-3 Hillier Wineries
- You will return back to your accommodations by approximately 4pm.
- A From the Farm Jute Shopping Bag (see store) is also included for your food and wine purchases OR choose a signed copy of our new cookbook, The Art of Herbs, with artist Susan Wallis.
