1 pound beef tenderloin
1/4 cup olive oil
1 tablespoon fresh savory or oregano (finely chopped)
1/4 cup onion, finely chopped
4 cloves garlic (good size), finely chopped
1 teaspoon paprika (regular or smoked)
1 teaspoon fresh ground pepper
1 teaspoon red pepper flakes
1 teaspoon ground coriander
Butterfly the beef so it is about 1/2 inch thick .
Place the steak in a glass or ceramic baking dish.
Mix all the remaining ingredients in a bowl.
Then pour and massage into the meat.
Cover and marinate for at least 3 hours in the fridge.
Heat up your BBQ (preferred) or stove top and place a cast iron pan on the grill.
When medium hot, place the steak pieces in the pan with the good marinade! Cook for about 3 minutes
per side , maximum. Serve with fresh homemade guacamole.
